Heat the water in a saucepan, add all the ingredients for the marinade, bring to a boil and cool.
Divide the fish: cut along the ridge, and then divide into portions, as for frying. Place the fish in a bowl, cover with cooled marinade, cover with cling film or tightly covered with a lid and put in the refrigerator for three days.
After 3 days, pickled red fish at home is ready. Cut into thin slices and enjoy!
