Sun Dried Tomatoes – Healthy Food All Year

Proper nutrition is not always expensive. And we are ready to prove it again! Our today’s recipe is incredibly cheap and simple. Dried tomatoes are present in the diet of many slimming and even fitness trainers, they are happy to absorb this is not quite traditional for our latitudes delicacy. And not by chance. Firstly, it is delicious. After trying again, you can not refuse it. Secondly, it is convenient. Tomatoes are ready to eat – they can be added to scrambled eggs, salads, pasta, soups, and even pastries and cheese. Thirdly, it is a great way to “save” tomatoes that are on the verge of expiration, perepseli or simply too many of them.

To make dried tomatoes at home, take:

  • 1.5 – 2 kg of ripe tomatoes of small size;
  • 500 ml of olive oil;
  • 4 tablespoons of wine vinegar;

  • 3 sprigs of fresh basil;
  • 20 black peppercorns;
  • 3 tablespoons of salt;
  • dry herbs to taste.
  • How to cook dried tomatoes?

    Wash and dry the tomatoes well. Choose only the ripest, better even overripe. Cut each tomato into two, remove the core.

    Preheat oven to 70 degrees. Prepare a baking sheet – cover it with parchment, then put the halves of tomatoes on the paper with the pulp facing up. Tomatoes stack tightly to each other. After the oven has warmed up, reduce the temperature to 50 degrees and only then place a baking sheet in it. Keep the door ajar.

    The drying process will take from 4 to 8 hours, so plan the preparation of tomatoes in advance, preferably in the morning. Drain tomatoes until crunching is not necessary – the halves should remain flexible. When the tomatoes are ready, remove them from the oven and cool.

    Wash and sterilize the jars in your usual way. At the bottom of each lower leaves of fresh basil, tightly put tomatoes in a jar, interspersed with layers of tomatoes with salt and herbs, pepper, and especially garlic. Pour 2 tablespoons of vinegar into each jar.

    Canned or not?

    If you want to spin tomatoes dried for the winter, pour in each jar of hot refined oil (fill them up to the top). Then cover the jars with lids and turn upside down for 12 hours.

    If you intend to eat tomatoes in the next two months, you can pour them with cold oil of the first spin, screw the lids and put them in the refrigerator. After 2 days, dried tomatoes in oil are ready, you can try!

    Save this simple recipe for dried tomatoes and enjoy all year round. Total cooking time is about 9 hours. We only warn you, this is a rather high-calorie delicacy, do not get carried away! Add to dishes moderately. You can also pre-blot the tomatoes with a paper towel.
