Turkey Soup With A Secret
Delight your home with a warming turkey soup! This is a very useful and unusual dish, leaving a light satiety and aftertaste. Especially it is good in the winter. To make a delicious soup with yesterday’s turkey, first boil the broth. To do this, crush the remains of a turkey with skin and bones and send to boil in a large saucepan over high heat. Boil for about an hour, periodically removing the froth and stirring. An hour later, add chopped celery, chopped onions, carrots and herbs. Cover tightly, reduce heat to low and cook for another half hour.
Strain the finished broth and bring to a boil again, and then continue to cook for about an hour. The total volume of liquid should be reduced to 8 glasses – so that the soup turned out to be saturated and rich. Then cool the broth and refrigerate for a few hours. When a crust of frozen fat appears on the surface, remove it. Now you can continue cooking.
In another saucepan (with a thick bottom), heat a tablespoon of olive oil and fry the chopped onion, carrots and celery in it. When the vegetables will turn golden, reduce the heat and simmer another 10 minutes. Pour the washed rice, cover with broth and cook another 15 to 20 minutes (until the rice is ready).
Separately, boil broccoli in boiling water and fry the mushrooms in butter (all in different dishes). Wash boiled broccoli in cold water. Broccoli, turkey, mushrooms and thyme put in broth, cook for 10 minutes. Salt and pepper to taste. Add spices and herbs to taste.
The feed is also unusual. It is necessary to put soup on the table in heated plates (this can be done in a microwave or using a water bath). Pour the soup in a bowl, sprinkle with grated cheese and fresh chopped herbs. Can be served with sour cream and dried bread or crackers.
