Pureed Beef Soup

Suitable for diet, but preferably a small portion in the morning. A great option for dinner with the whole family. The soup contains everything you need and is useful – chicken, beef, fresh vegetables. To reduce calorie content, take lean meat, cream of minimum fat content, and reduce the amount of butter and bread.

To make beef soup, we need:

  • 300 g of beef;
  • 800 g chicken;
  • 70 g veal;
  • 70 grams of ham;
  • 30 g carrots;
  • 80 g of cream;
  • 15 g celery root;
  • 15 g of parsley;
  • 15 leeks;
  • 80 grams of white bread;
  • 80 g butter;
  • 2 yolks;
  • 1 liter of broth;
  • salt, pepper to taste.

    Clean the tendons, rinse and dry the beef, cover with cold water and put to simmer. When water boils, add greens. In the process of cooking, remove the foam. Separate the chicken from the skin and boil it in another saucepan.

    Remove the boiled beef from the broth, finely chop. Cut the raw veal, ham, carrot, celery, parsley, leek into small pieces. Mix together, stir, fry in butter in a frying pan with a thick bottom until cooked.

    Soak the crumb of white bread in the broth, add to the roasting, and then grind everything to a uniform state – it is possible in a mortar or using a blender. Then mix the raw egg yolks, cream and dilute the strained broth in which the meat was cooked. Stir, put on the fire and bring to a hot state, but not to boil. Salt, pepper. Delicious beef soup is ready!

    Can be served with sour cream, toasted bread, olives, fresh herbs.
