Salad Eggplant Paradise

Very light and fresh salad that you have not tried. Suitable for the festive table, and for every day. It is possible for everyone, even those who do not eat meat and are on diets. Cook for 30 minutes!

We will need:
  • 2 medium eggplants
  • 1 large carrot
  • 2 bulbs
  • 2 – 3 medium ripe tomatoes
  • Natural yoghurt
  • 3 cloves of garlic
  • Salt, pepper to taste
  • Fresh greens

    Cut the eggplant strips, salt and leave.

    Fry grated carrots until golden brown. Put on paper towel to absorb excess fat. Do the same with the bow. Leave to cool.

    Soak the eggplants in water, drain all the water without residue. Cut the tomatoes into small pieces (squares), let them drain the extra juice. Then fry the eggplants, also put on a towel.

    Prepare the sauce – add salt and spices to the bowl with yogurt (you can take lean sour cream) salt and spices, squeeze the garlic through a press. Mix.

  • 1 layer – fried eggplants
  • 2 – fried onion
  • 3 – roasted carrots
  • 4 – fresh tomatoes
  • 5 – sour cream sauce with garlic
  • As a sauce, you can use not only sour cream or yogurt. 6 recipes of the best dressings to replace mayonnaise.

    Repeat all subsequent layers until the ingredients run out. Sprinkle with greens on top. Easy and incredibly delicious vegetable salad is ready!
